Fennel & Apple Slaw Recipe

Ingredients (Makes 6 portions)

3 heads fennel
3 granny smith apples
20g capers, drained
Fresh dill, a few pinches
Fresh parsley, ½ bunch
25g walnuts or candied walnuts


20ml extra virgin oil
A splash sherry vinegar
Zest and juice of ½ lemon (Use other half of lemon juice for lemon water)
Salt & pepper to taste


  • Whisk wet ingredients, zest of lemon and salt and pepper together until combined, set aside
  • Slice fennel wafer thin and cut apple into very thin batons, soak in lemon water
  • Crush walnuts into irregular sized pieces and chop herbs finely
  • Combine all ingredients and serve
