Salsa Verde Recipe

Ingredients (Makes 4 portions)

5g tarragon
5g fresh basil leaves
10g flat leaf parsley
1 clove garlic, crushed
100ml extra virgin olive oil
1 whole courgette
1 tsp Dijon mustard
10g capers
Salt & pepper to taste


  • Blitz together herbs and oil, set aside
  • Wash and finely chop the courgette
  • Rinse and roughly chop capers
  • Mix all ingredients together and season to taste

Brilliant with fresh fish!
