Vegan & Gluten free Mac n Cheese Recipe

Ingredients

250-350g gluten free macaroni (egg free)
1 ½ cups cauliflower or cannellini beans
1 ½ cups sweet potato, diced
1 cup nutritional yeast
¾ cup almond milk
¼ cup olive oil
1 clove garlic
1 tsp. Salt
1 tsp. onion powder
1 tsp. yellow mustard seeds
½ tsp. paprika

Method

  • Steam sweet potato & cauliflower until soft (10-15 minutes) and cook pasta
  • Blend all other ingredients (except parsley) until smooth
  • Combine cooked pasta, sauce & parsley in a bowl
